Special spread

I am a gf, sf, df eater (no soy, dairy or gluten) and I desperately love and miss dressings and sauces. Particularly Joey’s special spread. If you live in Lafayette and haven’t tried it … Travesty. I can make nearly any sauce at home but most require close attention over a stove and seeing as close attention is a rare species around these parts I’ve been sauceless.
Thus I was super excited to whip up my own mock Joey’s spread, which I would never claim touches the real thing, which you have to try (seriously why are you still sitting here reading).
Mix a dollop of mayo (I use a delish canola mayo from Spectrum found at Drug Emporium and Rouses, the latter of which is about twice the price FYI) with a bit of Dijon mustard and a dash of basil and voila. Delish on any sandwhich. I also add a pinch of garlic powder.
In other dressing related news I found a super easy honey mustard recipe on allrecipes.com.
1/4 cup mayo
1 tbs mustard
1 tbs honey
1/2 lemon
Absolutely creamy yummyness
Last night I seared chicken tenders in a skillet with olive oil then turn it off and coated with the dressing until it was warm then plated and drizzled with a bit of honey. 15 minutes total time

About Amanda Jean Elliott

I am a joyful believer in Jesus Christ, a mother, a sister, a writer, a maker of gluten free roux and a style editor. I love my son Wilder and the wild life that comes with a 4-year-old who has the energy of a pack of wolves. I also love naps (a lot). I love to cook and create my favorite dishes without gluten not because I'm trendy and anti-gluten so much as it makes me feel like I've been run over by a pack of wolves. I teach 5th and 6th grade girls Sunday School and have a classroom of the greatest girls I could imagine. Girls who often teach me more than I teach them. I believe these girls and many others are the spark to start a fire for The Lord the likes of which this world has never seen. I see more and more girls learning about more than just who God is ... but, learning about who God says THEY are. It is my prayer for every woman to know without doubt that we have a good good Father in heaven and whatever is not right on this earth, He will make right in this life or the next.
